Alain's formal culinary education began in France, where he honed his skills at prestigious establishments, including the renowned pâtisserie Lenôtre and several Michelin-starred restaurants. In 1992, he joined his father at The Waterside Inn, a three-Michelin-star restaurant in Bray, Berkshire, England. Over the years, Alain's talent and dedication saw him rise through the ranks, taking over as head chef in 2002.
Under Alain's leadership, The Waterside Inn has maintained its three Michelin stars, a testament to his culinary prowess and commitment to excellence. His cooking style emphasizes classical French techniques while incorporating innovative elements and the finest seasonal ingredients.
